This knife is an extraordinary example of the Japanese high art of bladesmithing. The Mokume* technique used to make the blades involves forge-welding a variety of steels and subsequently polishing them to accentuate the resulting grain patterns. The contrast between the silvery grain lines, the grey iron and the finely polished cutting edge makes this knife a true work of art. Putting the knife to use is just as satisfying - its exceptional sharpness slices through almost any food with ease. * Outer layers made of stainless steel, welded with pure nickel, folded multiple times and forged in a similar technique as used to make Damascus steel. The middle layer (cutting edge) is made of an incredibly hard, durable, sintered PM steel called Cowry X (C = 3%, Cr = 20%, Mo = 1%, V = 0.3%), RC 65 - 67. This metal is not rust-proof - we recommend occasionally wiping it with Camellia Oil. |
