The technique of repeatedly folding and forge-welding steel, called “Suminagashi” in Japan, is what gives Samurai swords their legendary sharpness. This technique is also used to make top-quality Hocho. These knives are a feast for the eyes and indispensable to the demanding chef.
Corrosion-resistant, 65-layered, 2 mm thick blades with a carbon steel core, mirror-polished, double bevel. Ebony micarta handles, full-length tangs.
